Entrée - Waakye, Goat Stew, Ghanian Slaw with Gari

Ingredients: (Servings: 4)

Waakye Recipe

  • 2 cups – Black eye beans
  • 2 cups – Thai Jasmine Rice (preferably from Costco / Sam’s Club)
  • 2 tbsp – Coconut oil
  • Salt – to taste
  • 1/4tsp – Baking soda (optional)
  • 4-6 – Millet/Waakye leaves -

Goat Stew Recipe - For Goat (Servings: 6 people)

  • 1 Pounds of Goat Meat (with skin preferably)
  • 1 Medium Onion Sliced
  • A Stalk of Fresh Rosemary / or 1 tbsp of dried rosemary
  • 4 Cloves of Garlic Minced
  • 1 Tbsp ground Ginger
  • 1 Tbsp Salt
  • Maggi cubes -
    • ** Maggie seasoning cubes / Onga seasoning cubes can be found at the African grocery store

For Stew Recipe - For Goat (Servings: 8 people)

  • 2 Medium Onion
  • 200 g Hunts Tomato Paste
  • 1 Medium Onion Pureed
  • 5 Cloves of Garlic Minced
  • 1 cup of grounded ginger
  • 1 ( 411g) can of Hunts Tomatoes Puree
  • ½ Cup habanero (Blended)
  • 1 Cup of Goat Stock
  • 2 Tbsp Curry Powder
  • 2 Bay Leaves
  • 1 Tbsp Salt
  • 1 Cup Vegetable Oil

Ghana Slaw Recipe - (Servings: 4 people)

  • 2 cucumbers
  • 2 carrots
  • 1 red onion
  • 2 fresh Roma tomatoes
  • 1 teaspoon black pepper
  • ½ teaspoon of salt
  • Cooking instructions: finely chop all the vegetables. Add black pepper and salt to taste

Beverage: Sobolo - (Servings: 4 people)

  • 1 Cup Hibiscus flowers
  • ½ Cup Sugar
  • ¼ Cup Ginger
  • 1 Teaspoon of Cloves
  • 1 teaspoon of Negro peppers
  • 1 teaspoon of grains of Selim
  • 2 big sized Pineapples
  • 2 oranges
  • 1 watermelon
  • 1 Granny Smith apple
  • 1 tablespoon pineapple extract
