Entrée - Waakye, Goat Stew, Ghanian Slaw with Gari
Ingredients: (Servings: 4)
Waakye Recipe
- 2 cups – Black eye beans
- 2 cups – Thai Jasmine Rice (preferably from Costco / Sam’s Club)
- 2 tbsp – Coconut oil
- Salt – to taste
- 1/4tsp – Baking soda (optional)
- 4-6 – Millet/Waakye leaves -
Goat Stew Recipe - For Goat (Servings: 6 people)
- 1 Pounds of Goat Meat (with skin preferably)
- 1 Medium Onion Sliced
- A Stalk of Fresh Rosemary / or 1 tbsp of dried rosemary
- 4 Cloves of Garlic Minced
- 1 Tbsp ground Ginger
- 1 Tbsp Salt
- Maggi cubes -
- ** Maggie seasoning cubes / Onga seasoning cubes can be found at the African grocery store
For Stew Recipe - For Goat (Servings: 8 people)
- 2 Medium Onion
- 200 g Hunts Tomato Paste
- 1 Medium Onion Pureed
- 5 Cloves of Garlic Minced
- 1 cup of grounded ginger
- 1 ( 411g) can of Hunts Tomatoes Puree
- ½ Cup habanero (Blended)
- 1 Cup of Goat Stock
- 2 Tbsp Curry Powder
- 2 Bay Leaves
- 1 Tbsp Salt
- 1 Cup Vegetable Oil

Ghana Slaw Recipe - (Servings: 4 people)
- 2 cucumbers
- 2 carrots
- 1 red onion
- 2 fresh Roma tomatoes
- 1 teaspoon black pepper
- ½ teaspoon of salt
- Cooking instructions: finely chop all the vegetables. Add black pepper and salt to taste
Beverage: Sobolo - (Servings: 4 people)
- 1 Cup Hibiscus flowers
- ½ Cup Sugar
- ¼ Cup Ginger
- 1 Teaspoon of Cloves
- 1 teaspoon of Negro peppers
- 1 teaspoon of grains of Selim
